今天晚餐高峰出餐慢,我发现不是厨房而是打包台堵住了

今天餐厅晚高峰 ticket time 一直超标,厨房觉得自己已经很快,前台却说客人在等。我站在 pass 口看了十分钟,发现热菜做好后卡在打包台,外卖袋、酱料和餐具没人提前配。处理上先让一个人专门做 expo,把堂食和外卖票分开摆,再把常用酱料按套餐预先分好。半小时后 ticket time 才降下来。经验是餐厅出餐慢不一定是锅台慢,bottleneck 可能在 packaging、runner 或 POS routing。建议同行高峰时别只催厨师,实际站到流程中间看一次,谁在等待一眼就知道。后来我们把外卖打包的 mise en place 提前到高峰前二十分钟,袋子、餐具、酱料和贴纸按热销套餐放好,出餐口就不再堆票。
