团餐打餐线怎么布置才不堵

团餐打餐线堵住,很多时候不是人手不够,是动线一开始就摆错了。主食、热菜、汤、餐具、刷卡点如果都挤在同一个口,客人排队慢,后面菜也容易被放凉。 我布置打餐线会先按客人流向摆,不按厨房方便摆。餐盘和筷勺放在最前面,主食不要卡在热菜前面太久,汤和饮料尽量放到末端或者单独一条线。容易慢的菜,比如需要现切、现浇汁、称重的菜,最好别放在最前面,不然整条线都等它。 保温设备也要提前开,不是菜到了才插电。高峰前把替换盘、夹子、抹布、垃圾桶位置都定好,现场少走几步就快很多。打餐口如果有临时加菜,最好从后段补,不要逆着人流端过去。收尾区也要留位置,不然客人拿完餐还堵在前面找盖子和纸巾。团餐同行你们打餐线一般是按菜品顺序排,还是按出餐速度重新排?
