外卖团餐过敏原标签漏贴的教训

做给办公室做 catering lunch的时候,我遇到过一个不太好处理的情况:一批盒饭里有坚果酱,但外盒没有 allergy label,客户 HR 看到后马上要求停发。它看起来像小错,但背后会影响成本、客户体验和团队互信。 处理时我先把事实和判断分开。我先把已发和未发餐盒分开,按菜单和备餐单重贴 allergen sticker,再和厨房确认交叉污染风险,给客户发了书面说明。回头看,团餐出错不是少贴一张纸那么简单,过敏原信息关系到客户安全和公司责任。如果过敏原管理没有闭环,后面再努力也容易变成补锅。 我给同行的建议是备餐线要把 vegetarian、gluten-free、nut-free 分色标签,打包前由第二个人复核。不要怕一开始多问几句,问清楚范围、证据和责任,后面反而快。做 catering 的同行,过敏原复核是在厨房完成还是出车前完成?
